About this recipe :
Poha is a light and fluffy breakfast dish made from flattened rice. It is popular across India because it’s quick to cook, easy to digest, and nutritious. Adding coconut and crushed ginger gives this version a unique aroma and flavor, making it slightly sweet, fragrant, and mildly spicy.
The peanuts and chana dal add a crunch, while green peas and coriander provide freshness. Black pepper gives a subtle warmth, and the optional onions enhance the taste. This dish is comfort food for many Indian households and is usually eaten for breakfast or evening snacks.
*Ingredients/सामग्री :
Poha (flattened rice)
Fresh grated coconut
Crushed ginger
Peanuts
Chana dal
Green peas
Green chilies
Curry leaves
Mustard seeds
Cumin seeds
Chopped onion (optional)
Fresh coriander leaves
Black pepper powder
Oil
Salt
Water (a little, for moisture)
Prepare the Poha:
Wash the poha once with water and let it rest for 5–10 minutes.
Heat the Oil:
Add oil to a pan and heat it.
Cook Onions & Spices:
Add chopped onion to the hot oil. Add mustard seeds, cumin seeds, and crushed ginger. Cook for 2 minutes.
Add Veggies & Salt:
After that, add green peas, green chilies, and salt.
Add Curry Leaves & Black Pepper:
Add curry leaves and black pepper powder. Cook for 3 minutes.
Dry Roast Peanuts & Chana Dal:
In another pan, add peanuts and chana dal. Dry roast them together until golden.
Combine Poha:
In the first pan with the cooked ingredients, add the soaked poha.
Add Roasted Peanuts & Chana Dal:
Add the dry-roasted peanuts and chana dal to the pan.
Add Coconut & Coriander:
After that, add chopped fresh coriander and grated coconut.
Moisten Poha:
Add a little water to moisten the poha if needed. Mix gently.
Final Mix:
Stir everything together lightly and cook for 1–2 minutes to combine flavors.
Serve
Your Coconut Ginger Poha is ready🤗 Serve hot.
