Ingredients
(Makes 3 9” pizzas)
3 cups all-purpose (maida) flour (plus 1 cup for kneading),
¼ cup milk powder,
½ tsp salt,
1 1/3 cups warm water,
1 tbsp sugar,
1 tbsp active dried yeast,
2 tbsp vegetable oil,

Toppings (whatever you like)
Method:
Combine warm water (body temperature), yeast, and sugar, and let sit until it blooms (about 3-5 minutes).
Meanwhile, combine all-purpose flour, dried milk powder, and salt in a mixing bowl.
Once the yeast has bloomed, pour it into the flour mixture and start kneading. You can use a stand mixer or do it by hand on the countertop, for about 10-12 minutes.
Tip: You can use up to 1 cup of extra flour, but use as little as possible.
Once the dough has become smooth and soft, cover with a towel and let it rest for 10 minutes.
Meanwhile, prepare 3 9” cake pans by pouring 2-3 TBSP of oil in the bottom of each one. (Use non-stick fry pans if you plan on cooking it on the stove top)
Separate your dough into 3 equal parts and roll them out to fit in your pans. Place in the pans, coat the top with a little bit more oil, cover and let rise for 45 minutes to an hour.
After 45 minutes, your dough will have doubled and look puffy. Use your fingers to place indents into the dough.
Place in the fridge for another 45 minutes (this step is optional, you can skip to the next one right away).
Option 1: Oven-Baked Pizza
Remove from the fridge and put your toppings on. You can use whatever toppings you want.
Bake in a 200 degrees Celsius preheated oven for about 12-15 minutes, or until the crust looks golden brown and crispy.
Tip: I leave my vegetables raw. If you do the same, make sure to season with salt, pepper, and a drizzle of oil on top. I also leave some cheese off until the final moment to make sure its just melted and not burnt.
Option 2: Stove-Top Pizza
Remove from the fridge and put it on the stove top. Use the largest burner with the lowest flame.
Cook the bottom until its firm enough to flip about (5-8 mins), and turn it over.
Cook the top (the dimpled side) completely and flip again. This will also take 5-8 mins.
Turn the heat off and put your toppings on. Turn heat back on low, cover, and cook cheese has melted (about 2-5 minutes).
Tip: The vegetables need to be cooked in advance as there is no direct heat applied to them.
Option 3: Frozen Pizza
Freeze the dough until the time you need it, remove from freezer, let thaw completely, and follow either one of the two methods above for cooking.
Tip: You can freeze the dough at any point after kneading it (even before the first rise). Simply remove from the freezer, let it thaw, and continue from the step that you left off from.
