INGREDIENTS
1 lb ( 454g ) beef ribeye (or flank steak)
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp white pepper
pinch of salt
1 Tbsp (15 ml) low sodium soy sauce
1 Tbsp (15 ml) Shaoxing cooking wine
1 large egg
2 Tbsp (15 g) cornstarch
1/4 tsp baking soda
the whites of 2 scallions (chopped)
2 to 3 cloves garlic (minced)
1/2 tsp fresh ginger paste (or minced)
1/4 cup (60 ml) cooking oil for stir fry
1 tsp sesame oil (optional) I drizzled 1 tsp to finish the dish

SAUCE
2/3 cup (158 ml) beef broth
1 Tbsp (15 ml) low sodium soy sauce
1 Tbsp (15 ml) dark soy sauce
2 tsp light brown sugar
2 Tbsp (15 g) cornstarch
