Detailed Recipe of Onam Sadhya Part 1

1: Sambar
Step 1
Ingredients
• Water 2 cups
• 1 tomato chopped
• 1 onion chopped
• 1 cup toor dal
• 1 tbsp turmeric powder
• Salt
Method
Pressure cook the above ingredients for 3 whistles and keep aside.
Step 2
Ingredients
• 1 tbsp oil
• 4-5 ladies finger (bindi)
Method
Fry the ladies finger for 5 min.
Reason: Later on while cooking in the gravy it will not turn soggy.
Step 3
Ingredients
• 1 cup tamarind water
• Salt
• 100 gm chopped pumpkin
• 1 drumstick cut into 1 inch
• 2 chopped brinjal
• 3 slit green chilly
• 3 tbsp Sambar powder

Method
Add tamarind water, salt and boil the liquid. Add in pumpkin, drumstick and brinjal. Cover and cook until the veggies are cooked well.
Add cooked dal (step 1) and mix.
Add water to the sambar powder and mix into a smooth paste.

Add the sambar powder paste in the dal mixture and mix well, add jaggery, fried ladies finger (step 2) and bring to a boil and cook on a low flame for 5 min.
Step 4 ( Tempering)
Ingredients
• 1 tbsp oil
• 1 tbsp mustard seeds
• 2 dried red chilli
• Curry leaves
Method
In a pan take heat oil add mustard seed, let it crackle and in red chili and curry leaves.
Add the tempering to the sambar. Sambar Ready!!

2: Cabbage Thoran
Ingredients
• 1 finely chopped cabbage
• 1 finely chopped onion
• 1 finely chopped ginger
• 3 finely chopped green chillies
• 1 cup grated coconut
• Salt
• Curry leaves
• 1 tbsp oil
• 1 tbs mustard seeds
• 1 tsp urad dal
• 1 tbsp turmeric powder

Method
In a bowl add cabbage, onion, ginger, green chillies, coconut, curry leaves, salt and mix well. Keep it aside.
In a pan heat oil, add mustard seeds let it crackle, add in urad dal, turmeric powder the cabbage mixture and mix well. Cover and cook on a low flame for 5 min. Open and give it a final mix. Cabbage Thoran ready!!


3: Inji Thayir
Ingredients
• 200 gm curd
• Salt
• 1 inch ginger finely chopped
• 2 finely chopped green chilli
Method
In a bowl mix well all the ingredients together. Inji Thayir Ready!!

4: Naranga Achar ( Lemon Pickle)
Ingredients
• 5 finely chopped lemon
• Salt
• 1 tbsp finely chopped ginger
• 2 finely chopped green chilli
• 2 tbsp oil
• 1 tbsp mustard seeds
• 1 tbsp asafoetida (hing)
• 2 tbsp red chilli powder

Method:
In a bowl add lemon, salt, ginger, green chilli and mix.
In a pan heat oil, add mustard seeds after crackle add asafoetida, red chilli powder cook for a minute add lemon mixture and mix well. Narnaga Achar Ready!!

5: Olan
Ingredients
• 300 gms sliced ash gourd
• 300 gms sliced pumpkin
• Salt.
• 1 cup water
• Coconut milk first extract
• 1 tbsp coconut oil
Method
FIRST MILK or FIRST EXTRACT
Remove the brown skin, grate 100g of the white meat, put in a blender, add lukewarm water (approx. 100 ml) and liquidise. Then force the liquid through a fine strainer. The strained liquid is called the First Milk or First Extract.

In a kadai add ash gourd, pumpkin, salt , 1 cup water and cover, cook until they turn soft.
Lower the flame and add Coconut milk and cook on a high flame until the liquid reduces.
Switch off the flame add coconut oil and give it a final mix.
