金瓜糕蒸熟后要待凉定型才能切块,热切的话,糕不只会沾刀,还会糊掉,卖相也就大大减分了。
份量:9-10人份
准备时间:20分钟
煮时:50分钟
材料A:
1公斤 金瓜(去皮切丁)
30克 虾米(剁碎)
4朵 香菇(切丁)
10粒 红葱头(切丁)
500克 水
适量 油
少许 葱花
少许 辣椒
材料B(粉浆):
300克 粘米粉
2汤匙 木薯粉
1汤匙 胡椒粉
少许 盐
少许 糖
少许 麻油
500克 水
准备工作:
1. 把虾米,红葱头各自爆至金黄色待用(虾米和葱末各留下一半做装饰)
2. 把材料B混合,搅拌均匀,待用
做法:
1. 热锅下油,加入虾米,爆至金黄色
2. 加入香菇,金瓜丁和葱酥,炒匀片刻
3. 加入水,炒匀盖上,待滚煮软
4. 熄火起盖,把材料B(粉浆)倒入锅内,搅拌均匀
5. 准备个8寸模,把金瓜米浆移入模内
6. 再把金瓜米浆放入蒸笼里,蒸45分钟
7. 熄火,取出金瓜糕,待凉
8. 晒上爆香过的虾米,葱酥,葱花和辣椒, 完成

Ingredients A:
1 kg pumpkin (peel off skin, dice it)
30 g dried shrimp (mince it)
4 pc mushroom (dice it)
10 pc shallot (dice it)
500 ml water
Some oil
Some spring onion
Some chilli
Ingredients B (Mixture):
300 g rice flour
2 tbsp tapioca starch
1 tbsp pepper powder
Some salt
Some sugar
Some sesame oil
500 g water
Preparations:
1. Saute dried shrimp, shallot separately until golden brown (leave out half of the dried shrimp and shallot for dressing later)
2. Mix all the ingredients B, set aside
Steps:
1. Heat the wok with oil, add dried shrimp, fry until it turns golden brown
2. Add mushroom, diced pumpkin, fried shallot, fry quickly
3. Add water, fry evenly and cover with a lid, leave it to boil
4. Turn off the gas and lift the lid, add ingredients B (mixture) and fry evenly
5. Prepare 8 inches mold, add pumpkin mixture into the mold
6. Add pumpkin mixture into the steamer, steam for 45 minutes
7. Turn off the gas, retrieve pumpkin cake and leave it to cold
8. Dress with fried dried shrimp, fried spring onion, spring onion and chilli, it’s done!
