Hikers Cake (No-Bake Chocolate Biscuit Slice)

Lightly grease the tray (using the butter wrapper works perfectly).
Ingredients
Base
ㆍ210g butter
ㆍ3 tablespoons sugar
ㆍ2 tablespoons cocoa
ㆍ1 egg
ㆍ¼ teaspoon vanilla extract or essence
ㆍ250g Marie biscuits (1 packet)
ㆍ¼ cup chopped nuts (optional)
Icing
ㆍ225g butter, softened
ㆍ1½ cups icing sugar (or icing sugar mixture)
ㆍ1 tablespoon cocoa
ㆍLemon juice, to taste
ㆍMilk (if needed, for consistency)
Method
1. Prepare the Biscuits
Place the Marie biscuits in a large mixing bowl and break them into rough 1–1½cm chunks. Don’t worry about being exact — rustic is perfect here.
If using chopped nuts, add them to the bowl now and mix through.
2. Make the Chocolate Mixture
Lightly beat the egg in a small bowl and set aside.
In a small saucepan, combine the butter, sugar, cocoa, vanilla, and beaten egg.
Heat gently over medium-low heat, stirring continuously.
Bring the mixture just to a gentle simmer. Keep stirring so the egg blends smoothly and doesn’t scramble or stick to the pan.
Once it reaches a simmer, remove from heat immediately.
3. Combine
Pour the hot chocolate mixture over the biscuit chunks.
Use a spatula to scrape every bit from the saucepan.
Mix well until all the biscuit pieces are evenly coated.
4. Press Into Tray
Transfer the mixture into the prepared slice tray.
Spread evenly and gently press down with the back of a spoon or spatula to compact it. It doesn’t need to look perfect — the icing will cover any bumps.
Refrigerate for 1–1½ hours, or until firm.
Icing
In a mixing bowl, combine the icing sugar and cocoa.
Add the softened butter and mix until smooth and creamy. You can use a spoon or an electric mixer.
If the icing feels too thick, add a tiny splash of milk until it reaches a spreadable consistency.
Add lemon juice gradually, tasting as you go. Start small — you can always add more.
5. Finish the Slice
Spread the icing over the chilled biscuit base. Rustic swirls add charm!
Return to the fridge for 1–1½ hours, or until the icing has set.
Once firm, slice into portions. This tray makes about 15 servings, but you can cut them larger or smaller to suit.
