Zucchini fritters are really easy to make with only a few simple ingredients. We like to use Pecorino Romano, but any good quality grated cheese is fine. The original recipe calls for parsley, but we made a second batch with mint, which might be even better.

Italian Zucchini Fritters Ingredients:
-3 medium zucchini
-3 large eggs
-3 Tbsp flour
-1/4 cup Pecorino Romano
-1 Tbsp kosher salt
-1/2 tsp black pepper
-1/4 cup parsley
-2 cups canola oil
