DESCRIPTION:
Achari baingan is one of the most delicious methods of cooking brinjals which gives nice aromatic flavour of spice to this recipe.
INGREDIENTS:
Slender eggplant 250 gms
Mustard seeds ½ tsp
Cumin seeds ½ tsp
Fenugreek seeds 1 pinch
Cloves 4 nos
Cinnamon 1 stick
Onion seeds ½ tsp
Fennel seeds ½ tsp
Oil 2 tbs
Onions(chopped) 1 cup
Salt To taste
Ginger garlic paste 1 tsp
Turmeric powder ¼ tsp
Red chilly powder ½ tsp
Amchur powder ½ tsp
Tomato puree 1 cup
Lime juice 1 tbs
Ginger(chopped) ½ tsp
Coriander leaves(chopped) 1 tbs
METHOD:
1. Cut slender eggplant into long and medium size slices.
2. Take a pan and add mustard seeds, cumin seeds, fenugreek seeds, cloves, cinnamon stick, onion seeds, fennel seeds and dry roast it, later transfer into mixie jar to make a fine powder.
3. Heat oil in a pan and add onions, little salt, ginger garlic paste, turmeric powder and saute it.
4. To it add red chilly powder, amchur powder, tomato puree, eggplant and cook it.
5. To it add achari masala and mix nicely
6. Atlast add lime juice, ginger, coriander leaves and mix nicely.
7. Now achari baingan is ready to serve with roti or rice.
