🥩 How to Grill Pork Tenderloin MEDALLIONS - Recipe
Prep Time: 30 minutes
Grill Time: 6-8 minutes
Total Time: ~40 minutes
Yield: 4 medallions
Calories: ~200 cals per medallion
🧈 Ingredients:
325 g pork tenderloin
2 slices bacon (60g)
Salt and freshly ground black pepper, to taste
10 g butter (for serving)
🥣Marinade:
1 clove garlic
2 bay leaves
1/4tsp fresh rosemary
30 g olive oil
1 pinch coarse salt
black pepper to taste
👩🍳 Instructions
Cut 4 equal medallions from the pork tenderloin. Trim any excess fat or silver skin from the pork tenderloin.
Wrap each pork medallion with ½ slice of bacon around the sides. Secure with cooking string.
Lightly sprinkle the medallions with salt and black pepper.
Make the marinade. Finely mince the garlic. In a small bowl combine the olive oil, garlic, crushed bay leaves, rosemary, coarse salt, and black pepper.
Rub the marinade evenly over the pork medallions. Cover and let marinate for 20–30 minutes at room temperature (or up to 2 hours in the refrigerator for stronger flavor).
Heat the grill pan to medium-high heat (about 200–220°C / 400–425°F). Lightly oil it to prevent sticking.
Place the medallions on the hot grill. Cook for 3–4 minutes per side until nicely browned and the internal temperature reaches 63°C / 145°F.
Remove from the grill and let the pork rest for 3–5 minutes. Top each medallion with a small piece of butter before serving.
Remove the cooking string before serving.
👉 Tips:
🥓 Crispier bacon trick
If you want extra crispy bacon, grill the medallions on their sides for 30–60 seconds after cooking.
🌿 Boost the flavor
Fresh rosemary gives the best aroma, but dried rosemary works too — just use a little less.
