🍷🧅 *FRENCH ONION BEEF DIP GRILLED CHEESE*
*INGREDIENTS (Serves 2-3):*
*For the Slow-Cooked Beef & Onions:*
• 1 lb (450g) Boneless Beef Chuck Roast, cut into large chunks
• Salt & Black Pepper
• 2-3 large Spanish Onions, thinly sliced
• 2 cloves Garlic, smashed
• 2 sprigs fresh Thyme
• 1 sprig fresh Rosemary
• 2 Bay Leaves
• 2 cups (500ml) Dry Red Wine
• 2 cups (500ml) Beef Stock
• 2 tbsp Vegetable Oil
*For the Sandwiches & Dip:*
• 4-6 slices Rustic French Bread or Sourdough
• 2 cups (200g) grated Gruyère Cheese
• 4 tbsp Butter, softened
• Optional garnish: Fresh thyme leaves
*METHOD (Low & Slow is Everything):*
1. *SEAR BEEF:* Pat beef dry, season heavily. Heat oil in a Dutch oven over high heat. Sear meat on all sides until deeply browned. Remove and set aside.
2. *LAYER & BRAISE:* In the same pot, add sliced onions, garlic, thyme, rosemary, and bay leaves. Place seared beef on top. Pour in red wine and beef stock. Bring to a simmer, then cover and reduce heat to low. Cook for **1 hour**.
3. *SLOW COOK:* Remove lid, stir, re-cover, and continue cooking on low for **another 2 hours**, stirring occasionally, until beef is fork-tender and onions are meltingly soft.
4. *PREP COMPONENTS:*
*BEEF:* Remove beef, shred with two forks. Mix with 2-3 tbsp of the cooked onions.
*ONION DIP:* Transfer remaining onions and cooking liquid to a blender. Blend until smooth. Season to taste. Keep warm.
*CHEESE:* Grate Gruyère.
5. *BUILD SANDWICHES:* Butter one side of each bread slice. On the unbuttered side of half the slices, layer: grated Gruyère, shredded beef mixture, more Gruyère. Top with remaining bread slices, buttered side out.
6. *GRILL:* Heat a skillet over medium heat. Cook sandwiches for 3-4 minutes per side, pressing gently, until golden brown and cheese is melted.
7. *SERVE:* Slice sandwiches in half. Serve immediately with a bowl of warm French onion dip for dunking.
