Banana Paniyaram is a tasty, sweet snack made using ripe bananas, rice and jaggery. These appams are spongy, light, not deep fried and can be prepared instantly in a few minutes.
Approx. preparation and cooking time: 15 mins
Rice soaking time: Minimum 4 hours/overnight
List of ingredients:
1. Washed and soaked rice - 1 glass
2. Ripe bananas (preferably Kerala/Nendran variety) - 3
3. Jaggery powder - 1 cup
4. Cardamom powder - Half teaspoon
5. White sesame seeds - 1 teaspoon
6. Black sesame seeds - 1 teaspoon
7. Dry coconut pieces - 1/4th cup
8. Baking soda - Half teaspoon
9. Ghee - 2 tablespoons
Method of preparation:
1. Into the mixer jar, add 3 ripe bananas, 1 glass soaked rice, 1 cup jaggery powder, a little water and grind to make thick batter. Transfer the batter into a large bowl and keep it aside for later.
2. Into a small wok/pan, add 1 teaspoon ghee and turn on the heat to low flame. Next, add 1/4th cup dry coconut pieces and roast until they are nice and golden brown. Then, add the roasted coconut pieces to the batter.
3. To the batter, also add half teaspoon cardamom powder, 1 teaspoon each white sesame seeds, black sesame seeds, half teaspoon baking soda and mix well until the batter turns nice and frothy.
4. Heat appe pan on medium flame, drizzle some ghee and pour the prepared batter into each mould. Then, cover with a lid and let it cook for sometime, flip and cook until both the sides are nicely done.
5. Enjoy tasty Banana Paniyaram as a delicious snack or for breakfast.
