Soak Pass: A Fix For Overly Acidic or Sour Soup/Zuppa (Coffee Recipe)

In this video, I demonstrate a technique for brewing espresso- or near espresso-strength coffee with AeroPress, which produces very balanced cups with higher sweetness and less acidity and sour notes. This technique is both for brewing and for troubleshooting your AeroPress soups. Enjoy!
THE RECIPE:
18g coffee, finely ground (1.0 on ZP6 Special)
27g room temperature to soak and pass
36-54g boiling water
18g in, ~36-54g out depending on the amount of boiling water
THE RECIPE:
1) Add your grounds to the Aeropress, shake it and drop the Aeropress lightly to level the grounds.
2) Put the paper filter on top and push it down with your plunger in a twisting motion to tamp the coffee. Remove the plunger.
3) Add your top paper filter to the puck, remove the air between the paper filter and the puck using an Aeropress stirrer or a spoon.
4) Add 27g of room temperature water. Put the plunger to around number 4 to soak the grounds and press out the 1st portion of the extraction (around 8-10 g). You can discard it (or save it to mix and balance out your finished brew).
5) Add 36-54g of boiling water.
6) Insert the plunger to seal your Aeropress and let the coffee drip using just the weight of your hand for around 40-50s. If the dripping slows down, push a little bit harder.
7) Enjoy your brew!
