This was a quick comparison to see if there was an obvious difference in the behavior of the steels. Two things were immediate :
1) The high carbide stainless, N690 tended to chip much more readily whereas the lower carbide stainless, 440 tended to impact. This is to be expected as the higher carbide volume directly reduces toughness.
2) The MT 151 needed just one minute per side on a coarse waterstone to remove the damage, then one minute total to polish the edge on a 1000 grit waterstone. The blade had just a few small spots still showing impaction in a few areas (barely visible), it was better than 95% of optimal. The Forester took twice as long and had twice as much damage still remaining. This is again to be expected because the higher carbide volume gives much lower grindability.
In short, the higher carbide (and more expensive steel) takes more damage and is much longer to repair.
