Recipe and ingredients for raspberry white chocolate cheesecake
Biscuit base
300g or one and a quarter cup of ginger nut or digestive biscuits
150g or 2/3 of cup of butter melted
Cheesecake filling
250g or one cup of white chocolate melt in the microwave at 20 seconds bursts
500g or 2 2/8 of cup of full fat cream cheese
100g or half a cup of icing sugar
1 teaspoon of vanilla extract
300 mils of double cream
250g or one cup of fresh raspberries not frozen 
Decorating
Freshly whipped cream
White chocolate shards
3 tablespoons of home-made raspberry jam
12 fresh raspberries not frozen
Leave in the fridge to set for at least six hours if not preferably overnight
