Why not eat Octopus. In this video learn How to cook prepare Octopus from a Executive chef of a successful Restaurant in the Midwest.
Ingredients List:
1 4-6 LB Octopus
3 qt. Cold Water
1 bottle Rice Wine Vinegar
1-2 tsp Peppercorn
5 each Bay Leaves
2 each Chile de Arbol
5 each Chile Piquin
Zest of one orange
Zest of three limes
1/2 cup Sea Salt
1 bulb Garlic
Begin by placing liquid ingredients in pot
add Zest of both Orange and Lime
Add Bulb of garlic (broken up)
add all dry ingredients to pot.
Add Octopus to liquid
Place pot on High heat until it comes to a boil. Once the mixture has come to a boil reduce heat to a simmer and place a lid that is smaller than the pot to completely submerge the octopus in the liquid. Cook for approx. 1-2 hours until Octopus becomes very tender.
Once complete remove octopus from liquid and chill. You can reserve some liquid to keep the octopus in to keep its flavor while chilling.
Other components:
Pickled red onion:
Take some reserved liquid brine from the Octopus mixture
bring back to a boil.
Slice one Large Red onion into rings and place in a deep pan or dish as you will be adding liquid to them. You want to make sure you heat up enough of the liquid to completely cover the red onions. You will then pour the boiling reserved mixture over the red onions and let steep for about 30 minutes. Tip: Letting steep over night in the refrigerator will bring best results. If you are unable to get the onions to completely change to a solid pink color, simply place the onions in a pot with the liquid mixture and bring back to a boil. immediately remove from heat and cool.
Avocado Spread:
1 Avocado
1/2 cup Milk (prefer whole)
1/2 Serrano Chile
1 Tbsp Sea Salt
Combine all ingredients and blend till smooth.
Garlic Chips:
6 cloves garlic whole
1/2 cup Oil
slice Garlic into thin slices.
Heat oil in small pot. Once reached high heat place garlic into pot and stir with slotted spoon until almost browning. Once the garlic begins to change color remove from pot with slotted spoon and place on paper towel to catch any remaining oil on chips. Be careful not to burn as after removing they will continue to cook called carryover cooking.
Citrus oil:
1/2 cup Extra Virgin Olive Oil
Juice from one Lime
1 tsp Sea salt
Combine ingredients, stir well and reserve for serving time.
To complete the dish:
Place about 2 TBSP of the citrus oil on desired plate
Place 6-10 pieces of the cooked and chilled octopus over the oil
Place a small amount of the avocado spread over each piece of octopus not to completely cover each piece as you are showcasing the octopus.
Next place a few pieces of the pickled red onion rings around and over the octopus as shown in the video.
Drop Garlic chips around and over each piece and lastly do the same with paper thin sliced Serrano chilies around the plate as well. (you may use what every type of green chile desired.)
