How to make Italian Sausage Tuscan Style made with fresh Sun-Dried Tomatoes and Garden Herbs

Ingredients
Pork shoulder 80/20%fat
9 Roma Tomatoes (18 recommended for added flavour)
Fresh Basil
Fresh Red Basil
Fresh Oregano
Fresh Parsley

Dried Basil 3g/kg
Kosher salt 18g/kg
Brown sugar 3g/kg (optional)
Dried Oregano 2g/kg
Dried Parsley 2g/kg
Black pepper 1g/kg
Fennel seeds 2g/kg
120g/kg ice Water
Soy protein binder 12g/kg (optional)


Quick pasta meal ingredients
Pasta
Butter 1/2 cup
Mushrooms 9pcs
Basil 1 tsp
Tomatoes 3 Tomatoes
Spinach 1 cup
Pecorino Romano cheese 1 cup
Pasta water 1 ladle
Salt & Pepper to taste

Process: Debone pork shoulder/butt, grind meat I like to use 3/16 grinding plate. When grinding, it's important that the meat is chilled. Add spices use ice cold water when mixing). when you're done mixing the meat it should feel tacky at this point, I fill the stuffer and begin to stuff the casings.( Casings used is natural hog casing 32/35mm). Quick Pasta Dinner
Melt butter add Mushrooms and Garlic saute 5 mins. boil pasta noodle of your choice. when the noodles are done add to mushroom and garlic sauce and mix. Add 1 cup of baby spinach and chopped tomatoes cook 5-10 mins. add 1 ladle of pasta water and slowly add Grated Pecorino Romano cheese and freshly chopped basil . Salt and Pepper to taste Enjoy

Equipment used was a meat grinder, small meat mixer and a 15Lbs vertical sausage stuffer.
