In this video, we are making Authentic Masala Puri, Pani Puri, and Dahi Puri using healthy green gram sprouts.
It is tasty, healthy, and perfect for chaat lovers 😍

🥣 Ingredients -
For Boiling Green Gram Sprouts -
• Green gram sprouts
• Water
• Rock salt – ½ to 1 tbsp
• For Masala Preparation
• Oil
• Whole spices
• Ginger (chopped)
• Garlic Cloves
• Onion
• Tomato
• Coriander leaves
• Turmeric powder – ½ tbsp
• Chopped coconut
• Badam
• Kaju (Cashew nuts)
For Final Masala -
• Oil
• Kasoori methi
• Chilli powder
• Garam masala
• Coriander powder
• Pepper powder
• Salt (to taste)
• Tamarind water
• Jaggery powder
• Gram flour (Besan) – 1 to 1½ tbsp
• Water (for mixing besan)
For Toppings -
• Puri
• Onion (chopped)
• Tomato (chopped)
• Cucumber
• Carrot
• Coriander leaves
• Sev mixture
For Dahi Puri -
• Thick curd
• Jaggery powder
• Pepper powder
• Salt
👩🍳 Method:
Step 1: Boiling Sprouts - First, take green gram sprouts in a cooker.
Add water and rock salt.
Close the lid and cook for 2 whistles.
Keep it aside.
Step 2: Preparing Masala Paste - Heat oil in a pan.
Add whole spices, chopped ginger, garlic, and cloves.
Then add onion and tomato and fry well.
Add coriander leaves and turmeric powder.
Mix nicely and let it cool.
After cooling, transfer it to a mixie jar.
Add chopped coconut, badam, and kaju.
Grind it into a smooth paste.
Step 3: Making the Masala - Heat oil in a kadai.
Add kasuri methi and the ground masala.
Add water as needed.
Now add:
• Chilli powder
• Garam masala
• Coriander powder
• Pepper powder
• Mix well and let it boil.
• Add the boiled sprouts along with the sprouts water (as needed).
• Add salt to taste.
• In a small bowl, mix gram flour with water and add it slowly to the masala.
• Mix continuously to avoid lumps.
• Add tamarind water and finally jaggery powder.
• Mix well and cook till the masala thickens.
Now the healthy sprouts masala is ready ✅
🥗 Masala Puri Preparation -
Take puris in a bowl and crush them.
Add boiled sprouts and prepared masala.
Add onion, tomato, cucumber, carrot, coriander leaves, and sev.
Mix well.
Healthy Masala Puri is ready! 😋
Pani Puri -
Use the same sprouts and masala.
For pani, we have prepared it using Nellikai (Amla) – details shared in a separate short video.

Dahi Puri -
Take thick curd.
Add jaggery powder, pepper powder, and little salt.
Mix well until sweet and spicy.
Assemble puris with sprouts, masala, and, all toppings, prepared dahi.
Dahi Puri is ready!
