Ingredients
For Soaking Dry Fruits:
1 cup fresh orange juice
2 tbsp almonds (chopped)
2 tbsp cashews (chopped)
2 tbsp kishmish (raisins)
2 tbsp cranberries
2 tbsp black raisins
2 tbsp tutti frutti
For Spice Sugar Powder:
1 small cinnamon stick
3–4 cloves
3 green cardamoms
½ cup sugar (adjust to taste)
For Caramel Syrup:
½ cup sugar
¼ cup water
Wet Ingredients:
1 cup milk
¼ cup sunflower oil
1 tsp vanilla essence
Dry Ingredients:
1½ cups maida (all-purpose flour)
1 tsp baking powder
½ tsp baking soda
2 tbsp milk powder
Others:
A pinch of salt
1 tsp vinegar
Extra dry fruits (for topping)
Method
1. Soak the Dry Fruits:
In a bowl, add fresh orange juice and all chopped dry fruits. Mix well and soak for at least 1 hour.
2. Prepare Spice Sugar:
In a grinder jar, add cinnamon, cloves, cardamom, and sugar. Grind into a fine powder and keep aside.
3. Make Caramel Syrup:
Heat sugar in a pan until it melts and turns golden brown.
Carefully add water and mix well to form caramel syrup. Keep aside to cool slightly.
4. Prepare Wet Mixture:
In a large bowl, add milk, sunflower oil, and vanilla essence. Mix well.
5. Sieve Dry Ingredients:
Place a sieve over the wet mixture bowl.
Add maida, spice sugar powder, baking powder, baking soda, and milk powder.
Sieve and gently mix to form a smooth, lump-free batter.
6. Add Fruits & Caramel:
Add soaked dry fruits along with the juice.
Pour in the caramel syrup and mix gently.
7. Final Touch:
Add a pinch of salt and vinegar. Mix lightly.
8. Prepare the Mould:
Grease a cake mould or line it with butter paper.
Transfer the batter, tap gently, and decorate the top with dry fruits.
9. Cooker Baking:
Preheat a cooker for 10 minutes with salt at the bottom (without whistle or gasket).
Place a stand inside, keep the mould on it, cover with lid, and bake on **low flame for 50–55 minutes**.
Check with a toothpick—if it comes out clean, the cake is done.
10. Cool & Serve:
Allow the cake to cool completely before demoulding.
