I have been working on an avocado cake recipe for quite a long time. Since 2020 actually. It's such a tricky fruit to bake with but I finally hit a jackpot 😁 This cake is so moist and refreshingly yummy. You would have it with a cup of coffee for breakfast and won't feel like you have ruined your summer body plans 🤓
1 2/3 cup (200g) all-purpose flour
2 tsp baking powder
1/2 tsp salt
3/4 cup (150g) granulated sugar
Zest of 1 lime
1/2 cup (113g) butter, melted
2 eggs
1 tsp vanilla extract
1/2 of a medium-size avocado
2 tbsp lime juice
1/4 cup full cream milk
Notes
~ Do not omit the lime juice, it keeps the avocado green (prevents oxidation). Lemon juice can be substituted.
~ To measure 2/3 cup of flour, use 1/3 cup twice.
~ All ingredients must be at room temperature
