Crab Cake Benedict Ingredients:
For the Crab Cakes:
2½ cups plain Panko breadcrumbs, divided
2 tbsp unsalted butter
1/2 cup chopped onion
1/2 cup chopped red bell pepper
4 cloves garlic, minced
2 tbsp Italian parsley, chopped
8 oz lump crab meat
3 eggs, divided
1/3 cup mayonnaise
1 tbsp red wine vinegar
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
1 tbsp capers, drained
2 tbsp hot sauce
1 tsp Old Bay seasoning
Salt and pepper
Vegetable oil, for frying
For Everything Else:
8 whole eggs
1 tbsp distilled white vinegar
1½ sticks (12 tbsp) unsalted butter
4 egg yolks (preferably room temperature)
Juice of one lemon
1 tsp salt
Pinch of cayenne pepper
Warm water, as needed
4 English muffins, split
Paprika, for garnish
Snipped chives, for garnish
