How To Make Flaky Buttermilk Biscuits

These Buttermilk Biscuits are everything you want in a biscuit. They're flaky, buttery, tender, and super easy to make!
Buttermilk Biscuits:
Yield: ~ 9 - 12 Biscuits
Ingredients:
595g Pastry Flour (2 parts A.P. Flour + 1 part Cake Flour)
15g Salt
28g Sugar
28g Baking Powder
227g Butter (83% Butter Fat), Frozen Grated
454g Buttermilk, Cold
1 Ea Egg for egg wash
Instructions:
The night before or at least 2 hours before making these biscuits, Place the measured butter into the freezer. This will make the following steps a lot easier.
Whisk together the Pastry Flour, salt, sugar, and baking powder in a large bowl. Using a box grater, grate the frozen butter into the flour mixture. Mix the flour with the butter using your hands to make sure all the butter pieces are coated in butter.
Make the well in the middle and add your chilled buttermilk. Stir using a wooden spoon and once it comes together switch to using your hands to knead the dough. Knead it until the flour is just about to be fully combined and then transfer it to a floured work surface.
Roll the biscuits out about a ¼ inch thick and fold in thirds and then in half to make multiple butter layers (before each fold remove excess flour with a pastry brush). Roll the biscuits out to an inch thickness and cut out using a ring mold coated in flour or use a knife to create square biscuits.
Place the biscuits on a sheet pan and let them chill in the fridge for at least 20 mins. Coat with egg wash made by scrambling an egg and Bake at 425F for 22- 25 mins or until golden brown. Allow to cool for 5 mins and enjoy!
