🌶️ Kolhapuri Bhadang Recipe
🧺 Ingredients
Puffed rice (churmura / murmura) – 4 cups
Roasted peanuts – ½ cup
Roasted dry coconut slices – ¼ cup
Finely chopped onion – 1 medium
Garlic cloves – 6–8 (crushed)
Green chillies – 2 (finely chopped)
Oil – 2 tbsp
Masala
Kolhapuri thecha or red chilli powder – 1½ to 2 tsp (adjust heat)
Turmeric powder – ¼ tsp
Salt – to taste
Sugar – a pinch
👩🍳 Method
Dry roast puffed rice on low flame for 2–3 minutes until crisp. Keep aside.
Heat oil in a pan. Add crushed garlic and sauté till light golden.
Add green chillies and chopped onion. Sauté till onions turn slightly soft (not brown).
Lower the flame and add turmeric, chilli powder/thecha, salt, and sugar. Mix well.
Add roasted peanuts and dry coconut. Stir nicely.
Switch off the flame and immediately add puffed rice.
Toss everything well so the masala coats evenly.
Add lemon juice and coriander. Mix again.
