Chicken pieces tossed in spicy peppery sauce. A must try recipe !
FIERY PEPPER CHICKEN
Ingredients
2-3 dried red chillies, diagonally sliced
400 grams boneless chickenbreasts, cut into cubes
2 tablespoons sesame oil
Salt to taste
Crushed black peppercorns to taste
1 tablespoon chopped garlic
½ tablespoon chopped ginger
2-3 spring bulbs, finely chopped
1 tablespoon light soy sauce
½ tablespoon dark soy sauce
1 teaspoon sugar
1 teaspoon vinegar
1 tablespoon cornstarch
2 tablespoons chopped spring onion greens
Method
1. Heat 1 tablespoon sesame oil in a non-stick pan. Add chicken, salt and crushed peppercorns, toss to mix and cook till chicken is half done. Transfer in a plate.
2. Heat remaining sesame oil in another non-stick pan. Add dried red chillies, garlic and ginger and sauté for a minute.
3. Add seared chicken and toss to mix. Add spring onion bulbs and sauté for a minute.
4. Add light soy sauce, dark soy sauce, crushed peppercorns, sugar and vinegar, mix well and toss to mix.
5. Dissolve cornstarch in some water to make a smooth slurry, add to pan and mix well. Add spring onion greens and toss to mix.
6. Serve hot.
Preparation Time: 5-8 minutes
Cooking Time: 10-12 minutes
