Here's a recipe for Kashmiri Rajma (Kidney Beans)
Kashmiri Rajma
Ingredients:
1 cup rajma (kidney beans), soaked overnight
1 large onion, finely chopped
2 tomatoes, pureed
1 tbsp ginger-garlic paste
1/2 cup yogurt (curd), whisked
2-3 green chilies, slit (adjust to taste)
1 tsp cumin seeds
1/2 tsp asafoetida (hing)
1 tsp turmeric powder
1 tbsp Kashmiri red chili powder (for color and mild heat)
1 tsp coriander powder
1/2 tsp garam masala
2-3 whole green cardamoms
2-3 cloves
1 small stick cinnamon
Salt to taste
2 tbsp mustard oil (or any cooking oil)
Fresh coriander leaves, chopped, for garnish
Instructions:
1. Boil Rajma: Drain the soaked rajma. In a pressure cooker, add the rajma with 3-4 cups of fresh water and a pinch of salt. Cook for 6-7 whistles, then reduce heat and simmer for 15-20 minutes until soft. Keep aside.
2. Prepare Masala: Heat mustard oil in a heavy-bottomed pan or kadai. Once hot, add cumin seeds, asafoetida, green cardamoms, cloves, and cinnamon stick. Let them splutter.
3. Add chopped onions and sauté until golden brown.
4. Add ginger-garlic paste and sauté for another minute until the raw smell disappears.
5. Stir in tomato puree and green chilies. Cook until the oil separates from the masala.
6. Add Spices: Lower the heat. Add turmeric powder, Kashmiri red chili powder, and coriander powder. Sauté for a minute, adding a splash of water if the masala sticks.
7. Add Yogurt: Remove the pan from heat for a minute, then gradually add the whisked yogurt, stirring continuously to prevent curdling. Return to heat and cook, stirring, until the oil separates again.
8. Combine: Add the boiled rajma along with its cooking water to the masala. Add salt to taste. Bring to a boil, then reduce heat and simmer for 15-20 minutes, allowing the flavors to meld and the gravy to thicken slightly.
9. Stir in garam masala.
10. Garnish: Garnish with fresh coriander leaves. Serve hot with steamed rice or roti...#trending#viral #food #kashmirire
