Inga edulis, or ice-cream bean, is a fast-growing, nitrogen-fixing tree native to South America that produces long, edible pods filled with a sweet, cotton-candy-textured, vanilla-flavored pulp. Used in agroforestry for shade and soil enrichment, these hardy tropical trees thrive in full sun and frost-free areas.
Key Characteristics and Usage
Fruit: The pods can grow over 2 feet long. They contain shiny black seeds surrounded by a white, fluffy, edible pulp that is eaten fresh.
Taste and Texture: The pulp has a sweet, vanilla-custard flavor, often described as similar to cotton candy or vanilla ice cream.
Usage: Commonly used in permaculture to improve soil health by fixing nitrogen. The wood is used for fuel and timber.
Growing Conditions: Thrives in tropical/subtropical, frost-free climates (USDA Zones 9–11). They prefer full sun, plenty of water, and can grow up to 30mtrs tall
