Creamy Chicken Alfredo with Mushrooms
Ingredients:
400 g chicken breast
200–250 g mushrooms (button or cremini)
250–300 g pasta (fettuccine or spaghetti)
300 ml heavy cream (20–30%)
2–3 garlic cloves, minced
80–100 g Parmesan cheese, grated
30 g butter
1–2 tbsp olive oil
Salt and black pepper, to taste
Fresh parsley, for garnish
Instructions:
1. Cook the pasta
Boil pasta in salted water until al dente. Reserve some pasta water for the sauce.
2. Cook the chicken
Cut the chicken into bite-sized pieces, season with salt and pepper. Sauté in olive oil until golden brown (5–7 minutes). Remove from the pan.
3. Cook the mushrooms
In the same pan, melt butter and add sliced mushrooms. Cook until most of the liquid evaporates and mushrooms turn lightly golden.
4. Add garlic and cream
Add minced garlic, cook for about 30 seconds. Pour in heavy cream and bring to a gentle simmer.
5. Make the sauce
Stir in grated Parmesan until the sauce thickens. If the sauce is too thick, add a little reserved pasta water.
6. Combine everything
Return the chicken to the sauce, add the pasta, and toss to coat evenly. Heat for 1–2 minutes.
