Ingredients:
• 750 g Chicken (bone-in, cleaned)
• 3 Onions (sliced & fried golden brown – birista)
• ½ cup Curd (beaten)
• 2 tbsp Ginger-Garlic paste
• 6–7 Cashews + 1 tbsp Melon seeds (soaked & ground to paste)
• ½ cup Fresh cream (optional for richness)
• 3–4 Green cardamoms
• 4–5 Cloves
• 1 Bay leaf
• 1-inch Cinnamon stick
• ½ tsp Shahi jeera (caraway seeds)
• 1 tsp Turmeric powder
• 2 tsp Coriander powder
• 1 tsp Red chili powder
• ½ tsp Garam masala
• 4 tbsp Ghee (clarified butter)
• Salt – as per taste
• Fresh coriander – for garnish
Method:
1. Heat ghee in a heavy pan, add whole spices (cardamom, clove, cinnamon, bay leaf, shahi jeera).
2. Add ginger–garlic paste, sauté until raw smell goes.
3. Add chicken pieces, sear on high flame till lightly golden.
4. Mix in turmeric, chili powder, coriander powder & salt.
5. Add beaten curd slowly (stir continuously so it doesn’t split).
6. Add cashew–melon paste + half of fried onion paste, mix well.
7. Cover & cook chicken till tender (add little water if needed).
8. Finish with cream, garam masala & top with remaining fried onions.
9. Garnish with fresh coriander & serve hot with naan/paratha. 🔥
