French Onion Soup — My Cookbook | Season 1
A classic French comfort dish made slowly, patiently, and with care.
🛒 Ingredients (Serves 2–3)
4 large yellow onions, thinly sliced
3 tbsp unsalted butter
1 tbsp olive oil
1 tsp sugar (optional, for caramelization)
Salt, to taste
Freshly ground black pepper
3 cups beef stock (or vegetable stock)
½ cup water (if needed)
1 small bay leaf
1 sprig fresh thyme (or ½ tsp dried thyme)
For Topping
4 slices baguette (toasted)
1 cup grated Gruyère or Emmental cheese
🔪 Preparation
Peel and thinly slice all onions.
Toast baguette slices lightly until crisp.
Grate cheese and set aside.
🍳 Cooking Method
Melt butter with olive oil in a heavy pot over medium heat.
Add onions and a pinch of salt. Stir gently.
Cook slowly for 30–40 minutes, stirring occasionally, until onions are deep golden brown.
Add sugar (optional) to enhance caramelization.
Pour in stock and bay leaf. Add thyme.
Simmer gently for 15–20 minutes.
Adjust seasoning with salt and pepper.
🧀 Assembly
Pour soup into oven-safe bowls.
Place toasted baguette slices on top.
Cover generously with grated cheese.
Broil in oven until cheese is melted and lightly browned.
🍽️ Serving
Serve hot.
Best enjoyed slowly, with silence or rain outside.
