६ वांगी मध्यम आकाराची
१/२ कप जाडसर चिरलेला कांदा
२ टेबलस्पून + १/२ टेबलस्पून तेल
२ लसूण पाकळ्या मोठ्या
१/२ कप भाजलेले सुके खोबरे
१ + १/२ टीस्पून गोडा मसाला
३/४ टीस्पून गरम मसाला
१ टेबलस्पून काश्मिरी लाल मिरची पावडर
१ टीस्पून गूळ
१ टीस्पून चिंचेचा कोळ
१ टेबलस्पून भाजलेल्या शेंगदाण्याचे कूट
१/२ कप + १/२ कप पाणी
१/२ टीस्पून मोहरी
१/२ टीस्पून जीरे
१/४ टीस्पून हिंग
६ कढीपत्ता पाने
३/४ टीस्पून हळद
चवीनुसार मीठ
आवडीनुसार बारीक चिरलेली कोथिंबीर


Brinjal gravy Ingredients and quantities:

6 medium sized brinjals
1/2 cup thickly chopped onion
2 tablespoons + 1/2 tablespoon oil
2 large garlic cloves
1/2 cup roasted desiccated coconut
1 + 1/2 teaspoon sweet masala
3/4 teaspoon garam masala
1 tablespoon Kashmiri red chili powder
1 teaspoon jaggery
1 teaspoon tamarind pulp
1 tablespoon roasted peanuts
1/2 cup + 1/2 cup water
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/4 teaspoon asafoetida
6 curry leaves
3/4 teaspoon turmeric
Salt to taste
Finely chopped coriander to taste
