For Purging Clams:
Clams (Asari): 500g
Water: 1000ml (4 cups)
Salt: 2 teaspoons
For Asari Miso Soup:🫕
Purged Clams (Asari): 200g
Sake: 1 tablespoon
Miso Paste: 1 tablespoon
Water: 400cc (1⅔ cups)
Chopped Green Onions: to taste

1. In a large container, dissolve 2 teaspoons of salt in 1000ml of water.
Add the clams, ensuring they are not overcrowded, and cover with foil poked with holes for air.

3. Rinse the clams under cold water, rubbing their shells together to remove any remaining sand.
