Season 2, Episode 3. Also known as sh*t on a shingle in military parlance, presumably, made in smaller batches, and with a shred of care about the taste, this hilariously nicknamed meal can become part of the regular rotation. Yes. I was actually in the Marine Corps.
Creamed Chipped Beef
4 tablespoons lightly salted or unsalted butter
4 tablespoons all-purpose flour
2 cups whole or 2% milk, cold
10 ounces chipped beef, I prefer Buddig brand
salt and pepper to taste
Slice the chipped beef into thin strips and set aside. Melt the butter in a medium saucepan until all the liquids evaporate, this will take about 3-4 minutes. Sprinkle in the flour and stir to combine. Continue to cook and stir the roux until the flour and butter begin to smell nutter, about 4 minutes. Add the milk and stir to combine. Add the chipped beef and stir until the mixture begins to bubble. Allow the mixture to bubble and simmer for a minute or two. Serve over toast.
