Uzbek Plov (pilaf)
I dedicate this video to my beloved mom ❤️
The National dish of Uzbekistan. My mom is originally from Uzbekistan. Growing up this was my favorite dish, I’m happy I finally get the chance to cook this recipe with my mom. Enjoy the watching and don’t forget to like, comment and share 😉
Ingredients
1/2 cup dry garbanzo beans
1/2 cup olive oil 🫒
2 Large onions 🧅
1.6 lbs (750g) Lamb/ beef meat chopped into chunks 🥩
3 cups hot water
2 cups Long grain rice
1.3lbs (600g) Carrots 🥕
5-6 baby potatoes 🥔 (optional)
1 head Garlic (or two small) 🧄
1 Tbsp Cumin powder (or seeds)
1/2 Tbsp Paprika powder
Salt and pepper to taste🧂🌶️
Method:
1. Soak 1/2 cup of dry garbanzo beans over night (make it day before)
2. Cut the onion to half and chopped into thin slices.
3. Chopped the carrots into medium sticks
4. Wash the rice under running water and set aside.
5. Use a large pot, the best result you’ll get with cast iron pot. Heat the pot on a medium high heat flam.
6. When the pot hot enough add the olive oil and the sliced onion, mix well. Cover with the lid and cook for about 3-4 min
7. Add the beef/ lamb chunks and mix well. Cover with the lid and cook for 5-6 minutes.
8. Add the spices- 1/2 Tbsp paprika, 1/2 Tbsp cumin, salt and pepper mix well.
9. Add handful of the carrots sticks and mix.
10. Add the potatoes, garbanzo beans, the rest of the carrots and 3 cups of hot water. Reduce the flame to medium low heat and cover with the lid and cook for 30 min.
11. After 30 min add the rice and mix just the top of the rice (do not mix all the pot)
12. Add more spices- 1/2 Tbsp cumin,salt and pepper by taste and mix again the top of the rice with the spices.
13. Make holes in the pilaf to allow the water to evaporate ( you should see 1/2 of the amount evaporate).
14. Then push inside garlic head and cover with a plate, close with the lid and cook on a low flame for 25-35 min until the rice fully cooked. Serve immediately and enjoy 😉
