🥘 Vegetarian Paella
A vibrant Spanish rice dish packed with vegetables, saffron, and bold flavors — popular around the world as a satisfying vegetarian main course.
🍅 Ingredients (Serves 4)
2 tbsp olive oil
1 onion, finely chopped
3 garlic cloves, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup green beans, trimmed and cut
1 cup artichoke hearts (fresh or jarred)
1½ cups paella rice (e.g., bomba or short-grain rice)
1 can (400 g) diced tomatoes
4–5 cups vegetable broth, hot
½ tsp saffron threads (soaked in 2 tbsp warm water)
1 tsp smoked paprika
Salt & pepper, to taste
Lemon wedges and parsley, for garnish
🍽️ Instructions
Prep the saffron:
Soak saffron threads in a couple of tablespoons of warm water to release color and aroma.
Sauté vegetables:
Heat olive oil in a wide, flat pan (paella pan if you have one). Add onion and garlic and cook until translucent. Add bell peppers and green beans; sauté for 5–6 minutes.
Toast the rice:
Add the rice to the pan and stir for 1–2 minutes, coating each grain in oil.
Add seasonings & liquids:
Stir in the diced tomatoes, soaked saffron (with its water), smoked paprika, salt, and pepper.
Simmer:
Pour in the hot vegetable broth, spreading the ingredients evenly. Don’t stir from this point — let the rice absorb the liquid as it simmers. Cook over medium heat for about 15–20 minutes, until the rice is tender and most liquid is absorbed. If needed, add a little extra broth.
Finish & rest:
Turn the heat off and let the paella rest for 5 minutes so the flavors meld.
Serve:
Garnish with fresh parsley and lemon wedges — squeeze lemon over the top before eating.
