Who’s up for a special and healthy fish dish? Today on Maputing Cooking, we’re showing you how to cook escabecheng lapu-lapu from scratch! This escabecheng lapu-lapu uses only the freshest ingredients, without all the preservatives of your typical escabecheng lapu-lapu. We will not use banana ketchup, instead, we’ll use pineapple to give it that sweet and sour kick that pleases the panlasang Pinoy!
The dish Escabeche is a Spanish classic, a recipe that we may have acquired from time of Spanish colonies. Since then, Escabecheng Lapu-Lapu has always been on the table of Filipino fiesta and celebrations as an option from the many pork, beef, and chicken recipe available.
Lapu-lapu Escabeche Recipe is made by deep frying a whole fish of Lapu-lapu or Red grouper fish or any kind of meaty fish, topping it with sweet and sour sauce with vegetables.

Escabecheng Lapu-Lapu Ingredients
• Grouper or (Lapu-lapu)
• Red and Green Bell Peppers
• Carrot
• Garlic
• Onion
• Ginger
• Vinegar
• Brown Sugar
• All-purpose Flour
• Cornstarch
• Salt
• Pepper
• soy sauce
• Cooking Oil
How to cook Escabecheng Lapu Lapu :
1. Season the fish with salt and pepper. Dredge it in flour and deep fry.
2. Mix together the vinegar, water, brown sugar and soy sauce. Set aside.
3. Heat up the pan with oil, saute the garlic and ginger.
4. Put in the onion, carrots and the red and green bell peppers. Cook for a minute.
5. Add the vinegar mixture from Step 2 and bring it to a boil. Do not stir until it comes to a boil.
6. Add the dissolved cornstarch, stir and cook until the sauce becomes thick.
7. Put the fried fish on a serving platter and pour the sauce on top.
8. Serve with rice. Enjoy!
