60克牛油
60克砂糖
20克鍊奶
15克吉士粉
15克粟粉
4克魚膠粉
30克清水
包麵團
250克麵粉
125克牛奶 (或125克水 30克奶粉)
50克砂糖
3克高活性乾酵母
5克發粉
大火蒸7分鐘,關火燜3分鐘。

Liu Sha Nai Huang Bao (Mandarin), Lau Sha Nai Wong Bao (Cantonese) is a popular Cantonese dim sum. It has oozy runny lava-like filling made from butter, custard and salted egg yolks. They are served hot while the custard is still runny. In order not to be scalded, split the bun into half, enjoy watching the custard oozing out and eat carefully.
Quicksand / Lava Custard Buns ingredients (make 10):
Custard filling:
5 salted egg yolks
60g butter
60g sugar
20g condensed milk
15g custard powder
15g corn flour
4g gelatine powder
30g of water
Wrapper dough:
250g low gluten flour / Cake flour
125g milk (or 125g water 30g milk powder)
50g sugar
3g instant dry yeast
5g baking powder
Steam on high heat for 7 mins. Turn off heat and rest covered for 3 mins.
