A dinner at Ms G in Sydney changed my perspective of Brussels Sprouts completely. A green vegetable that I absolutely hated before has now become one of my favourite sides to make, and it's a sure family hit.
This is my take on Spicy and Sticky Soy Brussels Sprouts, made Kung Pao style with Sichuan peppercorns and peanuts. The recipe works best for 500g of sprouts with a fairly dry result. If you want more sauce with the sprouts, then double the remaining ingredients. For a side I find the drier style works best.
The trick to this recipe is the roasting process. Skip the salt! If you salt the sprouts, they will start to release their moisture first and will take longer to crispy - which is want we want. Don't worry about the seasoning. The glaze is salty enough due to the soy sauce and vinegar and you definitely will not compromise on flavour.
