Tortellini Pizza Bake made in 15 minutes! 🍝🍕 so easy and great for meal prepping as it’s really filling. Using all flavours from a pizza but in pasta form!
Ingredients: (serves two)
Filled tortellini- I use spinach and ricotta from @Aldi UK
Tomato paste
Handful cherry tomatoes
Fresh or minced garlic
Half red onion
Sundried tomatoes
Balsamic glaze
80g of fresh mozarella
Salt & pepper
Dried oregano & basil
Method:
Cook your fresh pasta as instructed on the packet. Meanwhile, add your garlic, onion, salt & balsamic to an oil heated pan. Fry until softened.
Add in the cherry tomatoes, oregano tomato paste/sundried tomatoes and stir well. Once your pasta is cooked properly, add to the dish and mix well so its coated. Add to an oven proof dish, top with mozarella & basil. Bake for a few minutes until the cheese has softened. (200 degrees for around 3-4 minutes).
I serve with garlic bread or rocket salad.
