分享一个超实用的万能酱汁比例,做出来的年糕色泽红亮,口感软糯Q弹。秘诀就在于煮好的年糕要过冷水,这样炒的时候完全不粘锅,口感更筋道!
用料
年糕:200g
洋葱:半个
韩式辣酱:2勺
生抽:2勺
白糖:1勺
辣椒粉:1勺
淀粉:1勺
水:半碗
冷水:1碗
熟白芝麻:1勺
做法
第1步,半个洋葱切成丝备用;
第2步,调万能酱汁:半碗清水中加入2勺韩式辣酱、2勺生抽、1勺白糖、1勺辣椒粉、1勺淀粉,搅拌均匀;
第3步,锅内煮点水,水开后加入年糕,年糕煮到浮起来滤水捞出,再把年糕放入冷水中浸泡冷却;
第4步,热锅中倒一点油,油热后加入切好的洋葱,中小火翻炒后加入煮好的年糕,再翻炒一下,倒入万能酱汁,大火将酱汁煮开,途中锅铲多搅拌一下,防止黏锅,煮到酱汁浓稠就可以出锅啦,出锅后可以撒点熟白芝麻;
小贴士
1)韩式辣炒年糕中,先将年糕水煮再用冷水浸泡,主要是为了防止年糕软化并保持弹性、防止炒制的时候黏连或者粘锅、提升最终口感;
2)喜欢更丰富口感的可以加芝士片、海苔碎或鱼饼。

Today I’m sharing my "Magic Sauce" recipe. The rice cakes come out perfectly chewy, spicy, and savory. My secret tip: Rinse the boiled rice cakes in cold water to keep them from sticking and to ensure maximum chewiness!
Ingredients:
• Rice Cakes (Tteok): 200g
• Onion: 1/2 (thinly sliced)
• Korean Red Chili Paste (Gochujang): 2 tbsp
• Soy Sauce: 2 tbsp
• Sugar: 1 tbsp
• Chili Powder (Gochugaru): 1 tbsp
• Cornstarch: 1 tbsp
• Water: 1/2 cup
• Cool Water:1 bowl
• Toasted White Sesame Seeds: 1 tbsp (for garnish)
Cooking Steps:
• Prep the Onion: Thinly slice half an onion and set aside.
• Prepare the Magic Sauce: In a small bowl, combine 1/2 cup of water, 2 tbsp Gochujang, 2 tbsp soy sauce, 1 tbsp sugar, 1 tbsp chili powder, and 1 tbsp cornstarch. Mix well until smooth.
• Boil the Rice Cakes: Bring a pot of water to a boil. Add the rice cakes and cook until they float to the surface. Drain and immediately soak them in cold water to cool.
• Stir-fry: Heat a little oil in a pan over medium-low heat. Add the sliced onions and stir-fry until fragrant. Add the parboiled rice cakes and stir-fry briefly.
• Thicken the Sauce: Pour in the prepared magic sauce and turn the heat to high. Stir constantly to prevent sticking as the sauce thickens. Once the sauce is rich and glossy, remove from heat.
• Garnish: Sprinkle with toasted white sesame seeds before serving. Enjoy!
💡 Tips:
1)Rinsing cooked rice cakes in cold water is the key to a chewy texture.
2)Feel free to add cheese slices, seaweed, or fish cakes for extra flavor!
