200 g wheat starter 100% hydration
700 g water
700 g all purpose wheat flour protein content 10.3%
300 g whole wheat flour ground from red hard wheat berries protein content 14%.
22 g salt + 30 g additional water depending of flour
5 g white malt
Mix water and flour and set it for autolysis for 1 hour. Add starter and knead until smooth. Add salt and additional water (if needed) and white malt, knead more. Put the dough on fermentation for 4-6 hours. During the fermentation fold dough 3-4 times. When it rises approximately 1.5-1.7 times cut the dough into 2-3 pieces and form balls. Give them bench rest for 30 minutes. Then form loaves, put them into proofing baskets. Put baskets in the fridge for 10-14 hours.
Warm the oven with a stone for 1 hour. Take a food rope, cut 8 pieces long 25-27 inch and tie the loaves loosely as shown in the video. Make a score on the loaves. Bake with steam at 500 F for 15 minutes and without steam at 440 F next 20 minutes.
