Recipe for General Tso's chicken with full preparation of nuggets and sauce. You can also use this video for only the first part, as that will allow you to see how you can prepare basic Chicken Nuggets in the Ninja Foodi for use in other recipes or just by themselves.
RECIPE
General Tso's Chicken (Ninja Foodi or deep fried)
Ingredients
2 Cup of water + 4 Tablespoon of water
2 Tablespoon soy sauce
3 Tablespoon white vinegar
3 Tablespoon sherry cooking wine or white grape juice
1/4 Teaspoon white pepper + 1 pinch of white pepper
1 Teaspoon minced ginger
1 Teaspoon minced garlic
½ Teaspoon of Thai Chili paste (with or without garlic)
2-3 dried Arbol peppers (optional)
2 Tablespoon ketchup
1.5 Tablespoon hoisin sauce
5-6 Tablespoons sugar
10-12 oz. of chicken (I prefer boneless, skinless thighs but white meat will work well or use both)
½-¾ cup of broccoli florets
1 pinch of salt
2 egg whites
5 Tablespoon cornstarch
If you are going to Air Fry, the following Wet Batter and Breadcrumb ingredients will be needed:
½ cup water, very cold
1 large egg, very cold
¾ cup all purpose flour, sifted
1 cup breadcrumbs unseasoned
1 tsp sea salt, fine grind
sesame seeds
chopped green onion
Directions:
Step 1 - Sauce
In a bowl, add 2 Cups of water, 2 Tablespoon soy sauce, 2 Tablespoon white vinegar, sherry cooking wine, 1/4 Teaspoon white pepper, minced ginger, minced garlic, chili paste, ketchup, hoisin sauce, and sugar.
Mix together well and set aside.
Step 2 - Marinating the Chicken for DEEP FRYING ONLY. Do not perform the following step if you are going to air fry the chicken.
In a bowl, add the chicken, 1 pinch of salt, 1 pinch of white pepper, 2 egg whites, and 3 Tablespoon of cornstarch. Mix well. set aside.
Follow step 3-A or step 3-B. NOT BOTH.
Step 3-A - Air Fry the Chicken via Ninja Foodi:
In a shallow container, add cold water and cold egg. Sift flour into the same container. Mix with a fork, but do not beat or whisk. Gently swirl the fork around in the batter until the flour is mixed in and the batter is smooth.This takes a bit of time. Be patient!
In a second shallow container, combine breadcrumbs, salt, and cayenne pepper. Mix until combined.
Preheat the Ninja Foodi, with the basket in, on broil for 10 minutes.
Coat the chicken pieces in the wet batter and then coat in breadcrumbs. Place the coated chicken onto a cooling rack until all the pieces of chicken are coated.
Spritz the basket with oil of your choice and place the chicken nuggets in a single layer and spritz the top of the chicken nuggets with oil.
Close the TenderCrisp lid and select Air Crisp on 360°F/182°C. Air Crisp for 5 minutes and flip. Spritz with oil and Air Crisp for an additional 3-5 minutes or until the chicken nuggets are golden brown and the internal temp has reached at least 165°F/74°C
Remove and place on a cooling rack until needed.
OR .. Step 3-B - Deep Fry the Chicken in oil
Deep fry the chicken at 350 degrees for 3-4 minutes or until it is golden brown and loosen up the chicken so that they don't stick together.
Set the chicken aside.
Step 4 - Stir Fry
Add the sauce to the wok and then the broccoli and wait until it is boiling.
To thicken the sauce, whisk together 2 Tablespoon of cornstarch and 4 Tablespoon of water in a bowl and slowly add to your stir-fry until it's the right thickness.
Next add back in the chicken and stir-fry for a minute until hot and serve. garnish with sesame seed and chopped green onions.
