Ditch that pizza, it's time for mini calzones👌
Homemade dough, generous mozzarella, ricotta, parmesan, pecorino & salami filling... Kids will go crazy for these pizza pockets!
DOUGH
• 2 ½ cups all-purpose flour
• 1 tsp. salt
• ½ cup warm water
• ½ cup olive oil
• 1 tsp. sugar
• 2 tsp. active dry yeast
FILLING
• 1 cup (300 g) ricotta cheese
• 1/3 cup (75 g) mozzarella, cubed
• 1/3 cup (75 g) salami, cubed
• 2 tbsp finely grated Parmesan cheese
• 2 tbsp finely grated pecorino cheese
• 4 tbsp Stefano pizza sauce
• 2 egg whites, beaten
• Salt and freshly ground pepper to taste
