(Red chicken curry)
Ingredients අවශ්යද්රව්ය :
Chicken කුකුල් මස් 1kg
Garlic සුදු ලූණු 5-6 cloves
Pepper ගම්මිරිස් 2tbsp
1/2 big Onion ලූණු
Pandan Leaves රම්පෙ
Curry Leaves කරපිංචා
Lemon grass සේර
Ginger ඉඟුරු
Chili powder මිරිස් කුඩු 2tbsp
Cloves කරාඹුනැටි 4-5 pieces
Cardamom කරදමුංගු 4-5 pieces
Cinnamon කුරුඳු
Brindled Paste අඹරාගත් ගොරකා 2-3 tbsp
Curry powder තුනපහ කුඩු 2 tsp
Turmeric කහ 1 / 2 tsp
Salt ලුණු
How to Prepare Sri Lankan Red Chicken Curry
Step 1: Clean & Marinate the Chicken
Wash chicken pieces and drain well.
Add:
Roasted curry powder
Chili powder
Turmeric powder
Black pepper
Salt
Mix well and keep aside for 15–30 minutes.
Step 2: Prepare the Spice Base
Heat coconut oil in a pot.
Add mustard seeds and fenugreek seeds. Let them splutter.
Add cinnamon, cardamom, and cloves.
Add sliced onions and sauté until golden.
Add crushed garlic and ginger. Fry until fragrant.
Add curry leaves and pandan leaves.
Step 3: Add Chicken & Spices
Add the marinated chicken to the pot.
Mix well and cook for 5–7 minutes until chicken changes color.
Add coriander powder, cumin powder, and extra chili powder if needed.
Add tomato (optional) and mix well.
Step 4: Add Liquid & Cook
Pour in thin coconut milk or water until chicken is covered.
Add tamarind or goraka for sourness.
Cover and cook on medium heat for 20–25 minutes until chicken is soft.
Step 5: Finish with Thick Coconut Milk
Add thick coconut milk and gently mix.
Simmer uncovered for 5–10 minutes until curry turns deep red and thick.
Taste and adjust salt.
Step 6: Final Touch
Turn off heat.
Let curry rest for 10 minutes for best flavor.
Serve With:
