RECIPES
🍳 BREAKFAST – Egg Muffins with Seasonal Veggies
Main Ingredients:
6–8 large eggs
Zucchini (chopped small)
Asparagus (chopped small)
White onion (finely chopped)
Salt & black pepper
Fresh mint leaves (chopped)
Parmesan cheese (grated)
Sourdough bread
Strawberry jam
Extra parmesan (for topping toast)
🥗 LUNCH – Aloo Chaat + Masala Roasted Chickpeas
Baby potatoes or regular potatoes (boiled)
For Masala Roasted Chickpeas:
Canned chickpeas (washed and fully dried)
Oil
Salt
Red chili powder
Turmeric
Cumin powder
Ginger powder
Chaat Assembly:
Boiled potatoes
Roasted masala chickpeas
Plain yogurt (mixed with a little salt, sugar and cumin powder)
Green chutney
Pickled onions
Tamarind chutney (store-bought)
Pomegranate seeds
Aloo bhujia (optional)
Protein Boost Option: Greek yogurt instead of regular yogurt
🍛 DINNER – Pav Bhaji with Paneer
Bhaji:
Ghee or oil
Onion (chopped)
Garlic
Ginger
Tomato (chopped)
Salt
Turmeric
Red chili powder
Pav bhaji masala (generous amount)
Boiled Veggies Used:
Carrots
Green beans
Green peas
Cauliflower
Potatoes
Lemon or lime juice
Fresh coriander leaves
Paneer (crumbled, for protein)
Serve with Pav
