Discover the ultimate comfort food for the holiday season with this delicious and easy-to-make Southern Fried Chicken recipe, perfect for a crowd-pleasing meal. This moist old fashioned fried chicken is cooked low and slow in an iron skillet, making it an ideal choice for a special occasion or a cozy night in. Learn how to prepare this mouth-watering old-fashioned Southern Fried chicken recipe that's sure to become a new family favorite. With my Granny's simple ingredients and straightforward cooking process, you'll cooking like her in no time.
526) Fried Chicken, Covered Skillet
 whole fryer chicken, cut into pieces
 salt & black pepper
 Crisco or vegetable shortening
 3” deep iron skillet, (with lid)
Add to a Pie Plate:
 1-1/2 cups of self-rising flour
Rinse chicken pieces and pat dry. Cut each breast into two pieces. Salt and pepper the chicken well. Beat eggs and pour over the chicken. Coat each piece with the flour mixture, then let it sit for 10 minutes before frying.
Put shortening in a deep iron skillet. The oil should be 1/2 inch high. Preheat the oil until hot, then add the chicken pieces. Fry on both sides until golden brown. Place a lid on the skillet, ensuring it has a steam hole to allow steam to escape. Cook with the lid on for 5 minutes. Flip each piece and cover with the lid for 10 minutes. Flip the chicken, reduce the temperature slightly, and cook covered for an additional 5 minutes.
Remove the chicken and place on a wire cooling rack with parchment paper underneath or paper towels to catch the oil. Do not rest the chicken directly on paper towels. Let the chicken rest and cool before serving.
Tammy’s tip: chicken juices should run clear when done. If there is pink or red in the juices, the chicken should cook longer.
The internal temperature of the chicken must reach at least 175°F.
