How Salted and Flavoured Peanuts in shells are being made? - a basic high school science, but I did not know till today

I always curious of how the flavoured peanuts in shell are being made? Today I determined to find and found it sharing with you

A basic high school science yes it is that simple process

When it comes to in-shell peanuts, this is a mysterious process. Salt water or brine is used before crack the shell.

This involves as the air is sucked out of the peanut shells, the salty brine gets pulled inside the shells that is removing the air from the peanut shell enclosure.

The raw (unroasted) peanuts are loaded into large I vats called hoppers. Then the hoppers are filled with a simple brine made from water and salt, about 1% to 2% salt by weight—the exact amount is a trade secret.

Once the hoppers are full, a vacuum pump is applied to pull all of the air out of the hopper. This will suck the air from the peanut shell.

As the air is sucked out of the peanuts, the salty brine gets pulled inside the shells.

The process is repeated to ensure that the brine has entered all of the peanut shells.

The brine is then drained from the peanuts.

Next the peanuts go into a dryer, where the water evaporates, leaving behind a light coating of NaCl (a.k.a. sodium chloride a.k.a. salt) on the peanuts inside the shell.

At the end of this process, the peanuts are dry roasted to add that toasty salty flavor we all associate with peanuts through salting process

This is the way peanut with wasabi, chilli, hickory smoked, butter, garlic and ginger flavours are infused into peanut shell through in-shell salting technique.

Hickory Smoked flavored in-shell peanuts is made by adding smoke flavor to the brine.

Looks like endless opportunities for infusing flavour into peanuts in shell.
