Hi I am Diana Stobo, welcome to the Daily Juice.
We are going to do a Seaweed wrap today, we are going to make Ponzu sauce, this is a highly nutritious snack, I actually make this as a lunch in treat for myself if you think about getting rid of bread what will be something that you will be putting into your diet, I use raw seaweed. So raw seaweed is sundried, not toasted, all the minerals are still in them, we are going to lay our seaweed and layer a nice chunk of Avocado on each piece. Now think of this as your sushi rice, we are going to layer that on the lower half of your Nori and kind of smash it in a little bit with your fork creating a layer, now remember all the moisture in the Avocado is going to soften the Nori a little bit. There we go, that looks nice and we start layering our vegetables in there, here is some Cucumber, a little bit of Red Pepper, I just read that Sweet Red Peppers have more Vitamin C than any other vegetable, who knew. Jicama, delicious Jicama, crunchy light, some Carrots for color, see I like to cut them really thin like this so they lay nicely, you can cut it thicker if you are just not into playing with the knife but I enjoy it, and then this is our filler, some wild baby greens, and the trick is in rolling it, you want to tuck the greens in as you start to roll, now the Avocado is under here, we are going to keep this nice and open, start to roll as tight as you can, pulling and twisting and tucking, now I am no sushi chef, I have to give them a lot of credit because they make it look so easy but here we go, take a little bit of water, dipping water through the edge of your Nori and finish it off.
There you go, perfect roll, now the key to cutting is cut down the middle first with one fell swoop, check that out, now that’s a sandwich in itself, you can walk out the door with this right now and you’ve got lunch but we are going to make it more presentable as a snack by placing it on this tray and giving it a sauce and I’ll tuck you back in there, that’s just ridicu.
Right, and we are going to make our sauce, so this is fresh squeezed orange juice, always fresh squeeze your orange juice, tastes better and it has all the vitamins in it, this is Nama Shoyu, this is unpasteurized soy sauce, and here is some Ume Plum Vinegar, now Ume plum vinegar is actually not a vinegar in itself but it’s the pressed plums, the Ume plums from Japan and whatever liquid falls out of the plums, they call vinegar and this is actually a sour salty flavor, so these three together, makes for a great Ponzu sauce, you can make this ahead of time and keep in your refrigerator for a couple of days, and I’m just going to pour that into our little tray here.
Alright and here we have it, a delicious seaweed wrap with a homemade ponzu sauce, very nutritious, super delicious snack anytime of the day.
