Peanut Butter Cookie Ice Cream Sandwiches - with yoyomax12

You can get approximately 16 ice cream sandwiches with this recipe (using the smaller cookies).

Peanut butter cookie recipe:

1/2 cup butter softened
1 cup packed brown sugar
3⁄4 cup creamy peanut butter
1 egg
1/2 teaspoon vanilla
1 1/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt (omit if using salted butter)

Cream together the sugar, butter and peanut butter until creamy.
Beat in egg and vanilla.
Beat in baking powder and baking soda (and salt if using)
Gradually beat in flour a little at a time until combine.
Refrigerate dough for 2-3 hours until chilled.

Remove portions of dough and roll into a ball. I recommend enough dough to make 1 inch diameter dough balls.
Press to flatten and press in M&Ms into the tops.
Leave at least 2 inches in between the cookies as they spread quite a bit.

Bake at 350F for about 10-12 minutes until bottoms are light brown.
Allow to cool completely.
I recommend placing cookies in the freezer to get them nice and cold before filling.

If desired spread a teaspoon of peanut butter on the back of half of the cookies.
Place a scoop of ice cream on the back of one cookie and then place a second cookie on top. Press down lightly (watch not to break the cookies) and scrap off excess ice cream.
Press more M&Ms on the sides of the sandwiches and then freeze again until firm.
Store in a covered container layers separated by waxed paper or wrap with plastic wrap/parchment/waxed paper.
