RECIPES:
Ern McMuffin
Ingredients
1 English Muffin
2 tbs of olive oil
2 eggs
2 oz of shredded cheese
salt & pepper
1 - In a skillet, heat up approximately 2 tablespoons of olive oil over low/medium heat. Cut your english muffin in half, and place face down into the pan and toast for about 1-2 minutes. Once that's crispy, remove the muffins and place them on your plate.
2 - Next, use the residual oil and add in your two scrambled eggs (you can also cook your eggs anyway you take them). Once those are sufficiently scrambled, top with shredded cheese and let that sit in the skillet for around 20-30 seconds.
3 - Remove the eggs & cheese and place them on your english muffin and top with the desired amount of salt and pepper
Turkey Burger + Sweet Potatoes
Ingredients (yields 4 servings):
1 pound of turkey meat
garlic powder
onion powder
Salt Lick seasoning
2 large sweet potatoes
1 - Preheat your oven to 425 degrees
2 - Unlike what I did in the video, mix a 1:1:1 ration of all of the seasonings in a bowl to be used to lightly sprinkle onto the meat
3 - In a second bowl, break up your turkey meat. Lightly and evenly sprinkle in your seasoning mix into the turkey meat as you form patties out of it. Do NOT just roll it around in the seasons like I did because it's TOO SALTY
4 - place on a baking sheet and bake for 20-25 minutes until the middle of the patties are no longer pink.
5 - while the burgers are cooking, peel and chop your sweet potatoes into approximately 1 inch pieces. Place those into a bowl. Top with olive oil and salt and pepper and use your hands to mix it all together. Place on a baking sheet and place in the oven for 15 minutes. Once your timer is up, turn your sweet potato chunks and cook for another 15 mins until the potatoes are soft
6 - serve the burgers and the sweet potato pieces together with slices of avocado and a side of your favorite barbecue sauce!
