Ingredients:
1kg rice
0.75kg chicken
Wash and rinse chicken thoroughly.
Wash rice and soak them in water for about half an hour.
For laying:
One sliced cut tomatoe
One sliced cut lemon
2 chopped green chilies
One bunch of chopped coriander
One bunch of chopped mint leaves
1 tablespoon kewra water
To make gravy:
1/2 cup oil
4-5 medium sized onions, cut into slices
3 medium sized tomatoes, chopped roughly
2 green chilies
7,8 mint leaves
Chopped coriander
2 tablespoons ginger garlic paste
1 packet of ready made biryani masala (i always use national’s, this one is my favorite) you can use anyone of your choice.
Whole spices (3,4 cloves, one black cardamom, one small cinnamon stick, one bay leaf, 1teaspoon zeera)
Imli and aalu bukhara (1 tablespoon imli and 7-8 pieces of aalu bukhara) soak in 1/4th cup of water
1/2 cup yogurt
3,4 boiled potatoes (if you like potatoes in biryani, i love them) you can add orange food color in water while boiling potatoes.
For rice:
Salt according to taste
Whole spices as mentioned above plus small piece of jaifal and javetri (nutmeg and mace)
One star anise
1 tablespoon of kewra water (which i forgot to mention in video)
2 green chilies, cut into half
7,8 mint leaves
Boil almost 1.5 liters water in an open pan and add all ingredients.
When water boils, add rice and let them boil until 90% rice is done.
Preparation of chicken gravy (qorma)
Heat oil in a pan.
Fry onions until brown. Add whole spices and mint leaves in onions to give them a good aroma.
Then add tomatoes and chopped green chilies and fry.
Add 1 teaspoon salt, 1 teaspoon red chili powder, 1/2 teaspoon haldi and 1/4 teaspoon garam masala powder.
Although biryani masala packet has everything in it but by adding theses masalas, you will surely feel difference in the taste of biryani, trust me.
When oil separates, add chicken and fry it on high flame. In the meanwhile add adrak lehsan paste and biryani packet masala.
You can add potatoes at this stage.
After 10 mins of frying on medium low flame, add yogurt. At the end add imli aalu Bukhara with water.
In chicken biryani i dont use water, chicken tenders quickly in his own water, yogurt’s water and imli aalu Bukhara water.
Now gravy is ready.
Layering of biryani:
In a large pot, spread a layer of qorma then rice, sprinkle food color.
On top of rice spread sliced cut tomatoes, lemon, green chilies, mint leaves and coriander.
Repeat the same process two times more as shown in video. At this stage you can add one tablespoon of kewra water to enhance aroma of biryani.
Cover the pot with aluminum foil and close lid tightly.
Heat a heavy bottomed tawa, put your pot on tawa and keep biryani on dm for about 20-25 minutes.
Don’t forget to mix everything properly before serving.
