***Ingredients***
1. Indian Curry Base Jollof Rice

1 cup Vegetable Oil or any oil of your choice (divide into two)
8 Cloves of Garlic
1 Cup Ginger chopped
1 tsp Cumin
1 tsp Cardamon
1 tsp Cloves
2 small bay leaves
1 Cinnamon stick
6-8 Dry Chillies (Adjust to your heat tolerance)
8-10 Medium size Onions
10-12 Medium size Fresh Tomatoes
1 tbsp Gram Masala (Recipe below)
1 tsp Turmeric
1 tsp Rosemary
1 tsp Nutmeg
Basmati Rice
1 Chicken Stock Pot
Salt tt

***Gram Masala Recipe***

1 tsp cumin
1 ½ tsp coriander
1 ½ tsp cardamom
1 ½ tsp black pepper corns
1 roll cinnamon stick
½ tsp cloves

Grind everything together

2. Peppered Goat Jollof


3. Dawadawa Jollof Rice
2 Canned chopped Tomatoes
1 Large onion - diced
5-6 kpakpo shito
1 tbsp Chilli Flakes
2 tbsp Dawadawa/Locust Beans
Tuna
Mackerel
Dry Herrings
Oil
Salt to taste
4 Cups of Rice (local rice) I used jasmine rice
